Deconstruction
The process of deconstruction consists of creating a dish inspired by a recipe from the classic or traditional cuisine and modify all its elements; changing its texture, temperature, proportion and its form of elaboration. Using this procedure, which was started to be used in El Bulli in 1995, one loses the visual reference to the original recipe, but this reference is then recovered in the mouth, due to the fact that the memory is able to recognise a combination of specific flavours.
