Foams
The foams are creations that remind of classic mousses, but much lighter and with a more intense taste. Contrary to the classis mousses, which tend to include cream or egg white, the foams only consist of the chosen product. They are obtained using an instrument called a siphon. Until 1994, the year in which Ferran Adriá first used it to create his foams, it was only used for whipped cream.
